Ingredients
- 2 large eggs
- 1 tbsp light cream
- Salt & pepper to season
- 1 tbsp olive oil
- ΒΌ cup crumbled feta
- 100g McCain sweet potato fries, deep fried
- Mint leaves, balsamic glaze and salad leaves to serve
Steps
- Beat eggs and light cream, and season.
- Heat oil in omelette pan, then pour in eggs, moving gently to begin to set.
- Once a skin has formed on the base, crumble in feta and slide onto a serving plate.
- Add McCain sweet potato fries and fold an edge of the omelette over, topping with mint leaves and drizzling with balsamic glaze.
- Serve with a leafy salad to complete.
Perfect as a breakfast, brunch or lunch item.
