Mexican Buddha Bowl

Snacking as it’s meant to be. Relaxing, comforting and enjoyable.

Ingredients

  • 2 tbsp olive oil
  • 2 tsp taco seasoning
  • 100g tomatoes (diced or cherry)
  • ½ avocado, diced or sliced
  • 1 corn cob portion, charred and sliced
  • ½ cup black beans
  • ¼ red onion, sliced
  • ½ cup greens (rocket, coriander, oak lettuce, cos)
  • 100g McCain Cross Trax
  • Extra coriander to serve

Steps

  1. Combine oil and seasoning. Toss the tomatoes, avocado and corn separately in oil. Deep fry McCain Cross Trax as instructed and drain. Chargrill corn, and place corn, cross trax, black beans, tomatoes, avocado and greens evenly in piles around a serving dish. Top with red onion and extra coriander. Perfect to customise, or add some taco mince, for a meat option.
